VISION

The first goal of Food Biotechnology and Microbiology research center is to help in keeping food safe from foodborne pathogens. We do this by i) studying the control and implementation of antimicrobial technologies in the food industry as well as ii) attempting to better understand the vulnerabilities and resistances of foodborne pathogens against established and novel antimicrobials.

The second goal is to create new functional foods that offer specific health benefits to consumers. We do this by i) using a multidisciplinary approach including in vitro and in silico studies to discover new bioactive compounds from various protein sources, ii) evaluating the bioavailability of biomolecules by mimicking the gastrointestinal digestive system and using mono and multi-cell culture models, and iii) utilizing drug delivery system for improving the bioavailability of biomolecules.
